Pistachio-Rosewater Cookies

pistachcook.jpg from Veganomicon Check out the awesome photo my boyfriend took with his fancy camera - don't you just want to go swimming in a giant cookie sea? I made these cookies once before and they were delicious, so I decided to make them again when my boyfriend and I were having people over to watch Top Chef. I didn't bother to chop up the pistachios this time, and I think it actually makes them prettier looking. There were five people watching Top Chef and six cookies left afterwards, so I think this makes these a success. The recipe is available here if you do not own Veganomicon. (But you should. Because it is awesome and I sort of carry it around with me like a security blanket of delicious recipes at this point.)
