from Veganomicon
Check out the awesome photo my boyfriend took with his fancy camera - don't you just want to go swimming in a giant cookie sea? I made these cookies
once before and they were delicious, so I decided to make them again when my boyfriend and I were having people over to watch Top Chef. I didn't bother to chop up the pistachios this time, and I think it actually makes them prettier looking. There were five people watching Top Chef and six cookies left afterwards, so I think this makes these a success.
The recipe is available
here if you do not own Veganomicon. (But you should. Because it is awesome and I sort of carry it around with me like a security blanket of delicious recipes at this point.)

Swim in a giant cookie sea? where do I have to sign?
They look great, I have to get over my idea that pistachios are meant to be eaten as a salty snack…

omg, yes, veganomicon is so a security blanket of deliciousness! I had a moment last week where I thought someone had borrowed it from me and was so relieved to find it still on the shelf (although it’s just as likely to be found next to the microwave, on the couch, in my bed…
)
those cookies look amazing, too!

nice. those look beautiful and tasty. glad to know that there are other vegans out there enjoying Top Chef, even though it is so decidedly non-vegan. Wouldn’t it be cool if they had a vegan challenge??
Those cookies are definitely on my to-bake list now. Thanks!

What kind of fancy camera does your boyfriend have? I noticed the improvement in the photos right away.
