from Vegan with a Vengeance and My Roommate
I woke up early on Saturday because of daylight savings, and when I wandered downstairs I discovered that it was 9:30 instead of 10:30, and that my roommate was making raspberry syrup. Of course I wanted to get in on that action, so I told him I'd help make pancakes if they could be vegan. I grabbed my trusty copy of Vegan with a Vengeance, and bam! Delicious pancakes. Then both my roommates and I sat around at ate pancakes with raspberry syrup and drank coffee. Best way to spend an extra daylight savings hour ever.

It occurs to me that my standard pancakes are vegan. (Start making bread, with a little extra sweetener and some oil in the sponge. Put the risen sponge on a griddle. Make any leftover batter into bread.)
Do people usually use egg?

Aw yeah!
I usually use egg in pancakes because my vegan pancakes always feel loftless.
My vegan waffles, on the other hand, are the subject of several major norse eddas.
