Tofu & Eggplant - recipe from the Moosewood cookbook. If I were going to make this again, I would marinate the tofu first, and cook the eggplant longer. Overall, a good recipe, but I undercooked things a little.

I make versions of this all the time (usually without eggplant). Yours looks very pretty
You might consider frying the tofu first in some peanut oil and then adding it at the end. I’m making it tonight with the last of our garden eggplants. Yum!
