The next day I had the leftovers of both salads in a wrap, along with some more spinach. It was quite tasty - yay for leftovers.

I love tofu eggy salad too…and I like the idea of adding an apple. I never woulda thought of that. Sorry about the too-hot beet salad. I once added a WHOLE CAN of chipotles in adobo to a recipe that called for one chiptole (I mis-read thinking it meant one can). OMG! That was some hot shit.

i’m with you & Bianca – i too love a good “egg salady” tofu & i’m gonna have to try it with some garam masala, curry, and tumeric. mmmmmmmmmm! that stinks that the beet salad was super spicy, but i’m glad you fixed it with the awesomeness that is mayo (i swear i could eat vegenaise with a spoon. mmmmmmm!). and spinach totally balances it out in my book! yay!

Oooh I think these both look delicious! I always love a good tofu salad and the idea of the beet salad intrigues me. It was genius to put them in a wrap the next day. Ohhh vegan mayo….I love you.
