Tofu Scramble

Loosely based on Puttanesca Scramble from Vegan Brunch
I saw this recipe on Isa’s blog, and I really wanted to make it but I didn’t have tomatoes or olives or fresh herbs. So instead I just sort of threw something together with sun dried tomatoes and capers and Braggs and dried herbs and fresh dill. And while it was not as delicious as I’m sure the actual recipe would have been, it was still very tasty, especially with some toast to mop up the extra olive oily goodness. Hooray for tofu scramble!

Yep, Isa’s Puttanesca Scramble is on my list of things to make from that book…ha, actually I think the whole book is my list! Breakfast/Brunch foods are my favorite.

thinking about you not having olives made me realize that we’re out as well! damn! good to know that the scramble your way was still pretty darn tasty, Cyn! it looks most excellent – and ya gotta love toast to sop up all the awesome! hooray, indeed!
