fennel risotto from Jamie Oliver, tofu from The Modern Vegetarian Kitchen
My boyfriend doesn't like this baked tofu because of the mustard, but I love it, so I was super excited to make it while he was out of town. It's all tangy and delicious. I love the mustard and dill flavors in this, they're so good. This would go great with any Mediterranean kind of meal.
The fennel risotto was inspired by a recipe I found on Jamie Oliver's website. I really just used my standard pressure cooker risotto recipe and threw in some fennel at the beginning. I also put some cashew ricotta on top of it when it was done. Risotto in the pressure cooker is the best thing ever, it's so easy but so creamy and delicious. It does not get any more comfort food than this.

now i just need dan to go outta town so i can make some mustardy tofu goodnesses, too! mmmmmmmmmmmmmm! you make the tastiest look’n risottos in your pressure cooker, Cyn – they make me all jealousfaced! tee hee! i’m gonna have to get a pressure cooker so i can get on the easy, creamy, ‘n deeeeeeeeeelicious risotta wagon, too! huzzah!

I’m still scared of fennel. I need to just go out and buy some and get over it. I’m sure I’d like it cooked into things…I hate anise, but fennel seems like it would be milder.

Great post! I’ve only made risotto twice – both times in the pressure cooker. In fact, I found your blog by googling “wild mushroom risotto” and found your reference to VWAV. I thought “wait, I have that book”. Made it for dinner last night, had it for lunch today.
Why did it take me so long to discover pressure cooker risotto?
