rice salad from How It All Vegan
Roasted asparagus is my new favorite thing. You just put asparagus in the oven for ten minutes with olive oil and garlic, and then you have immense deliciousness! I may be slightly addicted to this.
I've made this rice salad once before, and it is so tasty that my boyfriend ate brown rice and
liked it. It has this great curry powder/soy sauce/rice vinegar dressing and tastes great with whatever veggies you throw in there. (I used carrots, radishes, celery, and threw in some mizuna for extra veggie goodness.) I also threw some tofu in there for protein, and because tofu is yummy. I think this would be a great thing to bring to a potluck, because it follows my two potluck rules for vegan food: It's tasty enough that omnis would like it, and it has stuff from every food group just in case it's the only thing you get to eat.

I am slightly addicted to roasted asparagus too – I’ve never added garlic though when I’ve roasted it – thanks for that tip!!
The salad looks great too.

mmmmmmmm! roasted sprigus (that’s what dan calls it! ahahhahhaha!) fo ‘sho = the best, Cyn! i think part of why it’s so awesome really is because it’s so darn easy to make. you’ve gotta love something that tastes spectacular & only takes just a wee amount time to create! huzzah! tofu IS yummy and the rice salad not only looks pretty, but it sounds pretty damn delicious!

Good potluck rules! And I saw a rice salad last night on Iron Chef. I’m sure it wasn’t vegan, but it made me think, hmm…rice salad sounds good. And now, thanks to you, I realize that I have a cookbook with rice salad in it. Yum!

I love roasted asparagus, it’s my favorite way to eat it. The best part is that it’s so simple to make!
