Lettuce Soup

lettucesoup from The Nourishing Gourmet I may have mentioned here that my boyfriend has decided to boycott salad. You guys already know about his hatred of Salad-As-Dinner, but lately he's started avoiding all salad, even salad when accompanied with other things. He's also in treatment for TMJ (it's a clicky jaw disorder), and they told him that salad is too chewy and he shouldn't eat it, so now he has actual medical orders not to eat salad and has become impossible about it. (He also has orders not to eat bread, but he hasn't been avoiding that at all, oh no. Just salad, even salad with fresh tender not-at-all-chewy baby greens.) But the CSA keeps giving us lettuce, so I've been searching for alternative things to do with it. Lettuce soup was one of the things that came up when I was researching, and I was sick last week and feeling like soup might help make me feel less like death, so I made a big pot of it. It was good! Surprisingly good. Really fresh and green tasting, and the flavor of the herbs comes out nicely without being overpowering. I think the splash of balsamic in this really makes it work. It was extra delicious as leftovers with a swirl of chimichurri sauce, and I think it would be great with pesto or any kind of herb paste. When I brought it for lunch I just tossed one of the cubes of herb paste I keep in my freezer in with the soup when I packed it up, and then microwaved the whole thing come lunchtime, and it was fantastic. The boyfriend, of course, did not eat any of it. He wasn't home when I made it, and then when he came back I uttered the words "lettuce soup" and he was having none of it.
