Crash Hot Potatoes from Vegan Yum Yum
So my boyfriend, king among men, best of all possible boyfriends, bought me a
Stovetop Smoker for Valentine's Day, since he knows that I love anything smokey. So now I can make my own smoked tofu, instead of paying ridiculous prices for it at Whore Foods! I made a super simple marinade for it with soy sauce and white wine, and then smoked it for 45 minutes with oak wood. And lo, it was delicious, filled with smoky goodness and ridiculously crispy on the outside. I'm going to play around with different smoking times and types of wood chips (Hickory! Apple!) but this was fantastic. Hooray for new toys.
The crash hot potatoes, of course, you know I feel about them. (Luv!) These ones were especially crispity and delicious due to me accidentally completely covering them in olive oil - it turns out that drizzling is a lot more difficult with a full bottle of olive oil and than with a mostly empty one. This time I used nutritional yeast, salt, pepper, and some parsley. Yum!
The bok choy is there to make it healthy, of course. I sauteed it in olive oil, soy sauce and some red pepper flakes. Very good.
