
Simple and delicious. Broiled eggplant sauted with tomatoes, garlic, and red pepper flakes. I had some of this with some Betta Feta from the Uncheese Cookbook mixed in, and it was unbelievable. It's good by itself, too. I was surprised by how spicy it was with just the red pepper flakes.
