
I totally want to do a vegan lasagna cook-off, with this lasagna and the How It All Vegan lasagna and the Nonna's Italian Kitchen lasagna and whatever other vegan lasagna is out there. It could be a big party where we could make the lasagnas and then drink lots of wine while they were cooking and then try them all. And then everyone could go home with lots of leftovers to eat for lunch the next week. Sadly, I think I am the only person nerdy enough to want to do this. (Anyone? Vegan lasagna party, my house?)
I think I like this lasagna better than the How It All Vegan one, but I miss the spinach in the HIAV version. Also, this one is way more filling. I can eat like, half a pan of the HIAV lasagna in one sitting, but this one I eat like a piece and a half and I'm stuffed. The lasagna is mainly noodles and mashed up tofu "ricotta", but it's got tomato sauce and a drizzly cheez sauce made from water & flour & nutritional yeast & tahini (tastes better than it sounds!) and then this fake Parmesan stuff on top which is awesome. I think next time I make this, I'll sub in the tofu ricotta from Vegan with a Vengeance. It would also be really good with the green veggie mixture from VwaV.

I would so totally have a vegan lasagne cook-off with you. You know, if, like, I lived in San Diego and not England. And if I could cook, even a little.
Anyway, this looks yummy.
