Spaghetti and Tofu Rosemary Balls

from Vive le Vegan The boyfriend picked this one out. I mixed it up a little by making the marinara sauce from Vcon and adding some fresh tomatoes to it, since we've got bags of tomatoes from the CSA sitting around. I really liked the tofu balls, although they were a bit dry - I added them to the pasta separately from the sauce, and I wonder if they would have been better if I'd let them sit in the sauce and soak it up a bit. I don't think my boyfriend liked them as much, he described them as "bready" and "having too many flavors." (They do have a lot of crazy flavors going on, but I liked that about them.) Overall, this was a simple but satisfying meal, and I felt a little bit of childlike glee while eating it. Spaghetti and tofu balls! Totally fun times.
