Seitan from Get Sconed, stuffing from Isa's blog
I was having one of those days where I was just not feeling it in the kitchen, so it's really not surprising that this turned out kind of "meh." Does anyone else have those kinds of days where it's just like nothing goes right when you're cooking and then you get more and more stressed about it? I hope I'm not the only one.
Anyway, I made the beer battered seitan half with Kittee's (delicious) seitan and half with this "chicken-style" seitan I made that where the dough was super wet and it turned out super crazy salty and with a weird texture. Guess which half of the beer-battered seitan turned out reasonably tasty? This also involved deep frying stuff, which I continue to be frightened by. So, yeah, meh.
The stuffing was pretty good. I really liked the pears in this, it gave it a really nice little bit of sweetness. I think I didn't add enough veggie broth to this, because it turned out a little dry. This also made a ridiculous amount - the "serves 8" label is not kidding. The skillet cornbread from Veganomicon continues to be delicious, even in stuffing form.

oh yeah, i definitely have days when i’m not feel’n it. had one last saturday and i made myself some “meh”, too. sadface! it all looks yummy though, and i’d like to give the stuffing a try – sounds good with the pears, i agree!
