Strawberry Soda from Vegan Soul Kitchen
I had people coming over for our weekly Lost night, so I kind of went crazy with the making of the foods. I started with the Strawberry Pop from Vegan Soul Kitchen. I'd seen it in
Vegan Crunk and I was like "Hey, I have strawberries! And also that looks delicious." I added a little more soda water to mine because it originally came out really thick, and I also didn't strain out the seeds because I am lazy. I sort of handed people glasses of this when they came in and was like "Have some crazy strawberry soda!" The verdict was "Crazy, but delicious," although for some reason my boyfriend didn't like it and got all upset that I used up our strawberries making it.
Tamarind Orange Glazed Tofu from Poopie Bitch, squash casserole is a Vegan Crunk tester
This tofu is another thing I saw on the internet and thought would be delicious. And I was right! Yay for Stephanie of
Poopie Bitch coming up with an awesome tofu recipe that let me use tamarind, and yay for tamarind for being awesome. This was easy and delicious, just how I like it.
The squash casserole was also fantastic. It's a tester for
Bianca's Cookbook. I frequently make Bianca's recipes for my Lost night crowd, because they are pretty much always super tasty and people love them. Tonight was no exception - people totally loved this, which is pretty impressive considering it featured both brown rice and zucchini, which are normally not crowd favorites. But it was super creamy and comfort-food delicious, and even vaguely healthy! Even my boyfriend liked it, although he sort of picked around the zucchini.
Chocolate Mint Ice Cream from Vice Cream
We got an ice cream maker a while ago, and the fact that I have been using it this little is really quite shameful. I have access to delicious homemade vegan ice cream whenever I want, and yet I rarely take advantage of it. Just who the hell do I think I am? So the other day I impulse bought a cookbook called Vice Cream, that is just about how to make vegan ice creams. (I've also been eyeing
this book, which hasn't come out yet but looks intriguing.) I decided to start off with chocolate mint, since I had all of the ingredients lying around. This turned out super yummy, although it had some texture issues. (It was a little gritty/chunky.) We recently bought a new blender, which should help with this, and I'm also going to try soaking the cashews beforehand next time. It was also super melty, so I think I should probably have let the ice cream maker run longer. (I find the noise my kitchen aid makes kind of annoying, especially when I have people over, so I always want to turn it off as soon as possible.) However, the texture issues didn't really interfere with it being
delicious, so I am definitely going to work on perfecting this.
