This cookbook was another Herbivore purchase. I'm not going to lie to you, a big factor in my buying it was the fact that it is
the most adorable cookbook ever. Seriously, it's all little and filled with drawings of bunnies. I cannot resist that.
This soup was also very good. It was very easy to make other than having to chop a ton of stuff. It had a very minestrone-like flavor going on. I really liked the use of tofu in this soup, but you should make sure you cut up your tofu really tiny if you make it, because it gets bigger as it simmers in the soup. I was eating this soup forever because the recipe makes a ton of it, and I was still digging it at the end. You can't go wrong with sticking some tofu and bunch of veggies together, that's what I say.
Also pictured is some melted Teese on toast. This was my first time eating Teese, and I really liked it. It's all melty and cheesy and actually tastes good, unlike most vegan cheezes. Unfortunately, if I want to get more I will have to order it from the internet. Or maybe fortunately, since it's pretty expensive.
