Soda Bread

sodabread.jpg from Vegan Planet Part of my new Sunday bread making. I made soda bread because I was out of yeast. This is a little dense and crumbly (possibly not helped by my using half white whole wheat flour), but tasty. The recipe recommends you eat it all the day you make it, and while it was better the first day, I think it's pretty crazypants to recommend eating an entire loaf of bread in one day. Actually, I have about half the loaf left a week later, and I'm trying to figure out what to do with it. Maybe this panzanella? Or maybe a savory bread pudding would be good. I better get on this before it goes moldy or something.

Tahini Rotini with Broccoli and Lemon

tahini.jpg from Vegan Planet I think maybe I just had a bad couple of days in the kitchen, because I was disappointed by this too. Part of it was my fault, as I way over cooked the broccoli and ended up with sad broccoli mush. But I also was expecting the sauce to be more sesame-tahini, kind of like the Sesame Soba Noodles from Vegan Planet, and it was more like a thinned out hummus. I did like the lemon flavor in it, though. I ate this with this sesame & nori seasoning, which is why it's so green in the photo.

Pasta Putanesca

puta.jpg from Vegan Planet I made this partly in response to a crazy caper craving I was having. This is weird because I've detested capers since childhood, and usually regard them with deep suspicion. But within the last couple of months I have changed my tune with regard to the noble caper, and now I can't get enough of them. This pasta with its caper/green olive/kalamata/tomato combo totally hit all of my salty-tangy-bitter urges in just the right way.

Fusilli with Roasted Asparagus, Sun-Dried Tomatoes, and Toasted Pine Nuts

pasta.jpg from Vegan Planet This is one of those pasta dishes that is simple and yet totally delicious. It was quick to make, and then I just mixed everything together. (I used pre-jullianed sun-dried tomatoes from Trader Joe's, which are awesome.) Also awesome with a little bit of soy-parm sprinkled on it.

Yellow Split Pea Soup with Grean Pea Garnish

soup.jpg from Vegan Planet I used mixed split peas for this, because that was what I had in the cupboard. When Naomi and Martin showed up at my house for dinner, I immediately put them to work chopping things, because that is what I do when people come to my house. You want to see me? Well, chop these potatoes into a 1/2 inch dice and then we'll see. With other people doing the chopping, this soup was incredibly easy, and we all sat around and ate hummus while it cooked. And then there was tasty, filling soup for dinner. When I ate the leftovers from this, I threw in some tempeh bacon, and it made it even more awesome.

Cajun-Style Collards, Not-So-Dirty Rice

greensrice.jpg from Vegan Planet I used the Trader Joe's Southern Green mix for the greens, and used roasted diced tomatoes with green chiles (I forget the brand name). The greens turned out awesome, with just the right amount of spicy. Also, I didn't have file powder, so I put in some seasoning salt instead. The "not-so-dirty rice" (dirty rice with fake ground beef) was also good, although a little bland by itself. Mixed in with the greens, it was perfect. So this meal was tasty and made me feel very nutritionally virtuous, but it did involve using three different pans and the rice cooker, which I felt was a little excessive. I guess if I had made the rice on the stove, it would have only used three pans, but still.

Sesame Soba Noodles

tahini.jpg from Vegan Planet This sauce was totally delicious, all salty and sesame. I think I'll switch up the vegetables if I make this again, though, because I found the peas/carrots/bell pepper combo too sweet to go with the tahini based sauce. I did get to use my food processor to shred the carrots, which was fun. This recipe is also omni roommate approved.

Savory Bread Pudding with Spinach

breadpudding.jpg from Vegan Planet This was tasty, although it tasted a little bit sweet to me, I think probably because I used white bread like the recipe called for. If I was going to make this again, I think I would use more of a crusty baguette type bread. But it definitely had the yummy filling comfort food thing going on. And the idea of a savory bread pudding is definitely cool, it reminds me of Italian bread soup. I added some fake bacon to this.

Ziti, Artichokes, and Olives in Spicy Tomato Sauce

ziti1.jpg from Vegan Planet The other day I drunkenly order Jesus Christ Vampire Hunter from Amazon, and I added Vegan Planet to my order to get free shipping. Best drunken internet shopping ever! I made this with my roommates for our weekly Roommate Dinner. It was super fast & easy to make, especially since I put them to work chopping things up. (I also made some baked tofu, not pictured, to go with it.) I used half roma and half heirloom tomatoes, so it was all colorful and pretty. This turned out really tasty and fresh tasting.
