Chocolate Cupcakes

I made a double batch of the plain chocolate cupcakes and used half for the Cherry Creme Cupcakes, and then we put some leftover orange pudding in half of these, and used the extra frosting and ganache and shaved chocolate. These are the cupcakes made to appease my inner depression era grandma, basically. However, still tasty.

These guys disappeared from the party pretty quick, I think people can't resist maraschino cherries, and the whole cherry sauce/frosting/chocolate combo is pretty damn good. They were also pretty easy to make, so don't be intimidated by the (blurry) fanciness.

orangecup.jpg from Vegan Cupcakes Take Over the World The best part of making these was watching one of my roommates suck leftover orange pudding out of a plastic bag with a hole cut in one corner. (We referred to it as the "pudding teat.") I made these and a four other kinds of cupcakes for my now traditional birthday cupcake party, and recruited my roommates into my cupcake sweatshop. (Most delicious sweatshop ever.) I hadn't ever made these before, and they were tasty. The orange pudding was surprisingly delicious on its own, too.

Gingerbread Cupcakes

gingbread.jpg from Vegan Cupcakes Take Over the World I got this new boyfriend and stopped doing anything other than make out with him, and then my friends started bitching and so I made them cupcakes to make up for it. I always find it exciting when I make a new recipe from VCTOW, and these guys live up to the hype. Tastily gingery without the heaviness I associate with gingerbread, plus big chunks o' crystalized ginger on top. The lemony frosting was good too, although I think I made it a little too liquidy. Edited to add: It's been brought to my attention that this post is actually a lie. I made these cupcakes for my friend Shannon's party, where there were already 4 desserts but none of them were vegan. The cupcakes I made for my whiney friends will be posted later.

Tiramisu Cupcakes

tiramisu.jpg from Vegan Cupcakes Take Over The World These are pretty much my favorite cupcakes, so I was shocked (shocked!) that they were the big losers at the cupcake party. We had at least half a dozen of these guys left over. My theory is that people were frightened by the fanciness of them. But then I took the extras to school, and my lab enjoyed them. (One of my labmates said "It's awesome having girls in the lab because then you get cupcakes!" I'm not sure if I'm helping the perception women in computer science, or setting it back.) Plus one of my friends gave some to one of her friends that is allergic to eggs, and she was really excited about it. Which led to the sort of weird situation where one of the professors emailed me to ask for my cupcake recipe . . .

Peanut Butter Cupcakes

And check out my roommates mad decorating skillz: These guys look exactly like the picture in the book. You put a little ganache in a sandwich bag, clip the corner, and it comes out looking all elegant.

We made these, peanut butter cupcakes, and tiramisu cupcakes and I think these were the big winners of the night. Everyone loves brownies, especially in cupcake form. These guys fell a little bit when we took them out of the oven, but I fixed it by filling in the holes with frosting. I'm a big fan of this frosting, too, it's somewhere between a ganach

It had been a really long time since I'd made anything other than the standard golden cupcakes, so when I found some vegan graham crackers at the store I was super excited to make the Smores cupcakes. These turned out tasty, although one of my friends complained that I put too much frosting on them. I was like "It's the marshmallow part of the smore! There's supposed to be a lot of it!" People were definitely intrigued/confused by the graham cracker crumbs and molasses in the cake part, I got a lot of people asking if they were gingerbread. Oh! And the graham crackers stuck in them immediately became super soggy, so I recommend you stick them in right before serving. They also gave them sort of a festive shark-cupcake feel, and worked great in keeping tinfoil out of the frosting when I needed to transport them.

I made these guys for a CSE potluck, and I made two batches because I knew that none of the CS dudes were actually going to make anything. I tried to make pink and purple frosting, but I made pink first and then just added blue to get purple, and it turned out a sort of greyish violet that my roommate dubbed "brain." I think maybe I should have added more food coloring, but I was worried about it making the frosting taste funny. Anyway, everyone like them, except of course the one dude who found out they were vegan (because the five vegans in my department were all "Awesome! Vegan cupcakes!") and was like "Uh, they were interesting." I was like "You would not be able to tell the difference between them and regular cupcakes, shut the hell up."
