Lentil Rice Casserole

cass.jpg lentils & rice from La Dolce Vegan The veggies: I sauteed mushrooms and sun-dried tomatoes in sherry until the mushrooms were all shrunken and moist-looking, and most of the liquid had evaporated, and then I added the spinach and cooked it for a couple of minutes until it had wilted. Yum! The lentils and brown rice are a casserole from La Dolce Vegan that is basically lentils, brown rice and crushed tomatoes, but tastes way better than that description makes it sound. It's one of those casseroles where you mix everything together and then bake it for like a billion hours, which is nice for when you're feeling lazy, as I frequently am. The recipe recommends you sprinkle soy cheese on it and broil it at the end of cooking, so I spread some tofu ricotta over it since I didn't have any soy cheese. I ate this mixed up with the spinach and mushrooms and it was really tasty, making me think it would be fun to experiment with baking some greens and stuff right into it.

kale.jpg from La Dolce Vegan I saw this one some vegan food blog and decided I wanted to make it. I used the southern green mix from Trader Joe's instead of kale, because having to chop greens up yourself is just so analog. This was easy, tasty, and seems pretty healthy - I give it an A++ and a gold star. Also, mad props to whole wheat couscous for just being awesome. PS Note that I kind of burned the pine nuts. Bummer.

lentilcass.jpg from La Dolce Vegan I kind of messed this one up by substituting diced tomatoes for crushed tomatoes. The crushed tomatoes sort of bind everything together and make everything taste all tomato-ey, whereas the diced ones, um, don't. So, yeah, I am dumb and this turned out kind of bland. But, it is the ideal thing to make when you just want to sit around and read Harry Potter instead of cooking dinner, since all you have to do is mix stuff together and then stick it in the oven for an hour and a half.

goulash.jpg from La Dolce Vegan How can you not want to make goulash? I mean, it's just such a fun word to say. This is really simple, just tomato and macaroni and fake hamburger and onion, but the spices made it really yummy. I probably won't make it again, but it was tasty in a simple, filling sort of a way.

Punk-kin Pasta

punkinpasta.jpg It's pumpkin pasta sauce! I would probably have been wary of this La Dolce Vegan recipe, but in my pregan days I used to get this awesome pumpkin mezzaluna pasta from Trader Joe's. This recipe was yummy and slightly reminiscent of that, but I felt like it was still missing something. If I make this again, I'll play with the recipe a little more. I used tofurkey sun-dried tomato & basil Italian sausage in this, and it went really well with it.

casserole.jpg I know, neither the name nor the photo make this sound particularly attractive. But it's actually a total yummy comfort food. It's brown rice, lentils, vegetable broth, crushed tomatoes & some spices, mixed up and put in the oven for an hour and a half. Perfect for when you want a delicious dinner, but need to do your algorithms homework instead of stirring stuff. (Although I recommend that unlike me, you remember to set a timer so you're not all, "Uh, shit, I think it's been in there about 20 minutes.") It's got FYH Monterey Jack melted on top. (I broiled it to make it all melty.) I usually don't make recipes more than once, but I've made this three or four times now. Yummers.

Jen’s Creamy Basil & Sun-Dried Tomato Pasta

dinner_04_20.jpg I am not sure the picture above really does justice to how creamy & delicious this pasta is. Also, it is super easy! Here is what you do: Boil water. Put pasta in water AT THE SAME TIME (as they say in knitting) whirl together a box of silken tofu, basil, sun-dried tomatoes, garlic, and some salt. Two minutes before the pasta is done, put the broccoli in with it. Drain, combine with sauce. MMMMMMM, delicious. And healthy, although possibly not when you eat as much of it as I did. Have I mentioned that I would like to marry my cuisinart? I told Ro I got a food processor, and he was like, "Does it make cooking twice as fast? And do you make little squeaking noises when you use it?" (because apparently this is what happens in the Sims when you get one), and i was like, "Actually, yes."
